Fy-Anna the Racy Chef's Pulled Jackfruit
Pulled Jackfruit with Rice and Guacamole
This no frills healthy vegan meal is rich in nutrients and counts toward your five a day too! Jackfruit makes a great pulled pork substitute and is rich in fibre, vitamin B6 and potassium.
For extra protein why not add a can of black beans in the final ten minutes of cooking time.
Ingredients to Serve 4:

- 1 tablespoon vegetable oil
- 1 teaspoon cinnamon
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 red onion chopped
- 1 teaspoon chopped garlic
- 1 tablespoon hot sauce, plus more to taste at the end if you like it spicy
- 4 tablespoons barbecue sauce plus more to taste at the end for extra stickiness or if you like it extra sweet
- 1 400g tin of chopped tomatoes
- 2 400g tins of jackfruit
- 200ml water
- 4 tsp lime juice or a fresh lime for squeezing
- salt and pepper to taste
- basmati or long grain white rice
- 2 avocados
Method:
Heat the oil in a large frying pan and fry the onion until soft, then add the garlic, cumin, paprika and cinnamon and stir until well mixed
Add the hot sauce, barbecue sauce, water, chopped tomatoes and jackfruit and bring to a simmer, stirring everything well.
Then cover and cook on low simmer for thirty five minutes, stirring regularly.
Meanwhile cook the rice according to packet instructions and keep to one side.
Prepare the guacamole by mashing the avocado with half of the lime juice, (saving the rest for the jackfruit),salt and pepper. Set to one side.
When 35 minutes is up, remove the lid from the jackfruit and cook for ten more minutes, using a fork to mash up the fruit for that 'pulled' effect. Taste and season as you go with salt and pepper and lime juice. Add more hot sauce for a spicier dish or more barbecue sauce for a sweet and stickier finish.

Serve with rice and guacamole for a filling and healthy meal.
