Fy-Anna’s Easy Peasy Tasty Lemon or Lime Posset


This is a fab recipe to knock up quickly and impress with as it’s delicious and decadent but super easy to make. Remember to allow time for overnight chilling in the fridge so it sets in time for your dinner party!


Serves 4 (generous portions) or 6 lighter sized


Ingredients

500ml double cream

140g caster or granulated sugar

Zest of one large lemon or two limes 

Juice of two large lemons or four limes

Pack of cheap shortbread biscuits to garnish 


Method

  • Select serving vessels: small water glasses or little dishes are perfect or if you’re going for more of a sample size use large shot glasses for a delicate finisher to the meal.

  • Pop the cream and sugar into a saucepan and cook gently on medium heat until it gets to boiling, reduce to simmer and stir until thickened for a max of 5 mins

  • Remove from heat and stir- it should be silky and thickened and all the sugar dissolved in. Don’t worry if the colour shifts from creamy white to light golden

  • Stir in the zest and juice of whichever you chose- lemon or lime

  • Use a jug to pour into the serving dishes, lightly tap the glass on the side to get rid of any bubble

  • Set overnight in the fridge

  • Crush the shortbread- a couple of biscuits will do, before serving and crumble on top of each posset.


Serve and enjoy
